2 tablespoon olive oil
¼ cup chopped tasso (you can substitute smoked ham or Canadian bacon
2 links Cajun Style Andouille sausage, sliced in half and then cut into 1 inch pieces
1 teaspoon Cajun seasoning
2 teaspoons fresh thyme
1 yellow onion chopped
2 celery stalks, chopped
2 clove minced garlic
¼ cup roasted red peppers or pimentos, chopped
1 15-can ounce red beans or red kidney beans (they taste stronger)
½ cup tomato sauce
½ cup chicken stock
4 cups cooked rice
Heat the olive oil in a large skillet, add the tasso cook for one minute, add the sausage, Cajun seasoning thyme, onion, celery and garlic, cook over medium heat for about five minutes. Add the red bell peppers, beans, tomato sauce and chicken stock. Simmer ten minutes. Serve over cooked rice. Serves four.
