Coconut Drop Buns

½ cup margarine at room temperature
¾ cup sugar
1 ½ cup whole wheat flour
2 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla essence (extract)
1 cup grated coconut
½ cup luke warm milk

4 tablespoons butter to brush buns

Cream margarine and sugar well, sift in all the dry ingredients. Add coconut, incorporate well. Add Luke warm milk and vanilla and mix thoroughly to produce a thick dough. (mixture will be a bit wet) Divide and shape into buns with floured hands onto a greased baking sheet. Space well apart. Bake in Preheated oven at 350 degrees (180c) for about 20 minutes until they rise and brown. (whole wheat will not brown much)

Melt butter and brush buns a couple of minutes before removing from the oven, let them cool 15 minute before eating, they will be moist and have a sweet bread quality and are perfect with morning tea. Makes 8 to 10.
Keeps for days.
