Pumpkin Pie

1 small pumpkin (a pie pumpkin) about 3 lb.
1- ½ cups heavy cream or evaporated milk
3 eggs
¾ cup brown sugar

1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon clove
(or 1 tablespoon Pumpkin Pie Spice)

Cut pumpkin in half, scoop out the seeds, and clean out any fiber, bake in preheated oven cut side down at 350 degrees for an hour.

Combine two to three cups baked cooled pumpkin and the rest of the ingredients in a blender or mixing bowl.

Pour into a 9” piecrust and bake for 1 hour or until firm in center. Serve warm or chilled.
